You will need: sweet potatoes (chopped into bitesize chunks), olive oil, chilli flakes, black beans, sweetcorn, avocado, tomatoes (chopped into chunks), red onion (thinly sliced), coriander, lime juice, salt & pepper
What to do: Heat the oven to 200C. Toss the sweet potato in a drizzle of olive oil and add the chilli flakes, salt and pepper. Roast for 30 minutes until tender.
When the sweet potato is nearly ready, drain and rinse the black beans and sweetcorn. Add all the remaining ingredients to a large bowl along with a drizzle of olive oil and season well. Mix everything well, being careful not to squash the avocado.
Divide the salad between plates and top with the sweet potatoes.
