Kale & Apple Slaw

Lindsay’s very own delicious slaw recipe. Fresh, delicious and goes with a multitude of dishes!

This recipe tastes best using Ben’s delicious apple cider vinegar which you can buy from the Farm Shop by the bottle and return to refill!

You will need:

For the salad: 1 bag of kale with stems removed and cut into thin strips, 2 medium apples julienned, ½ medium red onion sliced thinly.

For the dressing: 2 tablespoons apple cider vinegar, 3 tablespoons lime juice, 2 tablespoons of honey, 1 tablespoon olive oil, 2 teaspoons Worcestershire sauce 1/2 teaspoon pepper.

What to do: Place all the salad ingredients in a large bowl and toss.

In a smaller bowl, add all the dressing ingredients and mix. When blended, add the dressing to the salad and toss again to ensure everything is coated with the delicious dressing.

Let the salad sit at room temp for at least 1 hour, stirring occasionally.  Cover and refrigerate until serving time.

This slaw can be tailored to you; why not add some chopped nuts, dried fruit or give it a kick with some fresh ginger!
