You will need:
400g Bonnytoun broad beans, a small lettuce (roughly shredded), a couple of tomatoes (chopped into chunks), cucumber (diced), a small onion (finely chopped), garlic cloves (crushed), olive oil, lemon juice, salt & pepper
What to do:
Remove the beans from their pods, bring a pan of water to the boil and add the beans, cook for 2-3 minutes, then drain. Plunge the beans into some ice cold water - we want to stop the cooking process. Pop the beans gently out their skins.
Next, mix the beans in a large bowl along with the lettuce, tomato, cucumber, and onion.
In a different bowl, whisk together the crushed garlic, juice of the lemon and olive oil, with salt and pepper to taste. Drizzle over the bean salad and toss gently.
Here's where you can make this salad your own - top with parmesan shavings, finely sliced fennel, crumbled feta, pine nuts, cherry tomatoes, sliced radish .... whatever you like! Enjoy!
