Saag Paneer

You will need: olive oil, ground turmeric, chilli powder, paneer, spinach, onion, garlic cloves, ginger, fresh chilli, garam masala, lemon juice

What to do: Heat some olive oil in a large pan. Add the ground turmeric and chilli powder, cooking for around a minute until fragrant. Cut the paneer into bite sized chunks  and add to the pan. Toss well to make sure everything is evenly coated. Cook the paneer for around 8 minutes until golden and crispy all over. While the paneer is cooking, chop the onion, ginger and fresh chilli and blitz it in a blender. Remove the paneer from the heat and put on a plate. In the same pan, tip in the onion mix, season well and turn down the heat. Fry until golden in colour (you can add a little splash of water if it looks dry). Next, add the garam masala, stir in well and fry for around 2 minutes. 

Place the spinach in a colander and pour over boiling water until wilted. Drain and cool the spinach before putting it in a tea towel and squeezing out as much water as you can. Then roughly chop.

Add the chopped spinach & paneer to the pan to warm up and season to taste.

Serve in bowls and add a generous squeeze of lemon juice over the top.
