You will need: Bag of kale; a good glug of olive oil, juice of half a lemon, sea salt, cheese of your choice (we like feta), an avocado, sliced; a fruit of your choice (pomegranate is fantastic – but blood oranges, oranges, chopped apricots all work well), some toasted nuts (we have used pecans, walnuts, pine kernels).
What to do: Shred the kale. In a mixing bowl make up a dressing consisting of the olive oil, lemon juice, and a good pinch of salt. Now massage - yes – massage (it is quite hypnotic) the kale with the dressing. 5 minutes should do it, but feel free to do this for longer! All you have to do now is to toss in the final ingredients of your choice and enjoy with some crusty bread, or a baked potato or roasted veg.
