Lindsay's tried & tested family vinaigrette dressing - we recommend giving this simple recipe a go!
You will need: 1 tbsp Dijon mustard, 2 tbsp balsamic vinegar, 6-8 tbsp olive oil, pinch of sugar, 2 generous pinches sea salt, freshly ground black pepper, a little water
What to do:
Simply put all the above ingredients into jar and shake, shake, shake. You end up with a creamy dressing. Adjust the seasoning to suit your taste. Add a little water and shake again. This keeps in fridge for ages…
Lindsay’s French step-mum Joëlle always served the best salad. So now Lindsay follows suit and sprinkles finely chopped shallots over the lettuce, drizzles vinaigrette (above) over and finally adds some yeast flakes (tastes cheesy/nutty – known as fish food in her household because of appearance)! Toss the salad and serve. What’s not to love?
