You will need: Olive oil, butter, leeks, thyme, lemon, puff pastry, goat’s cheese, walnuts, parsley.
What to do: Put your oven on to warm up. Wash and slice the leeks. Roughly chop the thyme and walnuts. Heat some butter in a large frying pan. Once melted, add in sliced leeks until they have softened. Add the chopped thyme to the pan and the zest of half a lemon. When hot, add the juice of half a lemon, cook for around 30 seconds until the lemon juice reduces and season well. Remove from the heat and allow to cool slightly.
Lay your puff pastry out on a baking sheet lined with parchment paper. Lightly mark a 1cm border around the edge with a sharp knife and then prick the base all over with a fork.
Top the pastry with the lemony leeks, crumble over the goat’s cheese and scatter over the chopped walnuts. Drizzle some olive oil over the top and brush the edges with the oil too. Place in the oven for around 15-20 minutes, until the puff pastry is a golden brown.
Sprinkle with some chopped parsley and a little lemon zest. Eat hot or cold!
