You will need:
Savoy cabbage (outer leaves removed and cut into quarters), butter, diced pancetta/tofu, onion, carrots, celery, bay leaf, sage leaves, chicken/vegetable stock.
What to do:
Melt the butter in a large pan with a lid. Add in the pancetta/tofu and lightly fry until browned.
Turn the heat to low and add the onion, carrots and celery, stirring occasionally.
Add the bay leaf, sage and cabbage quarters to the pan, pour in the stock and season with salt and pepper. Bring to a simmer, cover and cook for roughly 20 minutes, or until the cabbage is tender. Serve!
This works great as either a meal for one, or as a side!
