Mushrooms on Toast

You will need:  a few slices of your favourite bread (we LOVE sourdough), butter, mushrooms, garlic clove, crème fraiche, optional handful of spinach or chard

What to do: toast your bread and set aside. Roughly chop your mushrooms and crush a garlic clove.

Add some butter to a frying pan and pop in the mushrooms, cook for a few mins and then add the crushed garlic clove and a few tablespoons of crème fraiche.

Cook for a few more minutes until mushrooms are soft, then stir through the spinach or chard until wilted. Pile on top of the toast with the egg and prosciutto if you’re using it and dig in!!
