You will need:  olive oil, onions, red pepper, chillies, chopped tomatoes, sprinkle of sugar, eggs, fresh parsley, yoghurt, garlic

What to do:

Slice your onions, peppers, and chillies. Heat up the oil and cook the onions, peppers, and chillies until soft. Add your chopped tomatoes and a sprinkle of sugar. Give it a good mix and season to taste when it has reduced.

Make a well for each egg and crack 1 egg into each well. Season the eggs and pop a lid on and reduce the heat until the eggs are as cooked as you like them. I like them quite runny for dipping!! Other versions of recipes I’ve seen are more of a scramble so you could also scramble the eggs with a fork before adding them to the tomato and pepper sauce and gently mixing it through!

Grate, chop, or crush your garlic and mix with the yoghurt while the eggs are doing their thing. Chop up your parsley and once the eggs are finished sprinkle the parsley over the top. Scoop your eggs and as much sauce as you like onto your bread, with a nice spoonful of yoghurt and get stuck in!!
