Roasted Sweet Potatoes

You will need:  sweet potatoes, olive oil, garlic, rosemary, salt, optional (bacon/anchovies/feta)

What to do: Scrub your sweet potatoes and chop up into bite size pieces. Liberally drizzle with olive oil, sprinkle over the garlic, rosemary, and salt. Give it a good mix.

Here’s where you can get a bit creative, if you’re a meat eater then bacon is great, anchovies are another delicious one to mix through.

Pop it all in the oven for 20ish minutes (depending on how hot your oven is, and what size the pieces are)

If you’re in the mood you could crumble over some feta and give it another good mix.

Gorgeous with a fresh salad with a nice acidic dressing.
