Warm flat bean, potato and bacon salad

Flat beans are very similar to a traditional string bean or green bean, and can be substituted in almost any recipe using these. Flat beans can be eaten raw, as a side dish, in stir-fries, and other vegetable dishes. Flat beans can also be called Italian Flat Beans, Romano beans, snap beans or simply Italian Green Beans.

Warm Flat Bean, Potato and bacon salad

Scrub and dice some lovely UK new potatoes (500g)

Cook a wee bag of flat beans lightly in salted water after toping and tailing them (5-8 mins - but be careful not to overcook).

Finely slice some bacon, pancetta, or other tasty alternative and fry in olive oil until nearly crispy.

Once all the raw ingredients above are cooked, throw them into a bowl with a dressing of your choice. (We recommend a vinaigrette with some diced shallots, or red onion, or a little white onion very finely diced, and some fresh herbs - fantastic).

Serve warm with some fresh crusty bread.
