Spiced Parsnip soup

Fry a few organic onions in butter.

Add 1lb chopped parsnip, 1teaspoon ginger and salt. Cover and fry for 10 minutes.

Add 1 pint vegetable stock & 1 tbs curry powder, bring to the boil and simmer for 15 minutes.

Puree, season, add a splash of cream and serve.
