You will need:
1 sweetheart cabbage (shredded)
A handful of pine nuts
Olive oil
Freshly ground black pepper
Juice of 1 lemon
What to do:
Steam your cabbage for about 6-8 minutes.While it's cooking, toast the pine nuts on a dry pan until light brown. Crush half the pine nuts on a chopping board with a rolling pin, or use a pestle and mortar. Drain the cabbage, pour over a couple of glugs of olive oil, add the crushed and whole nuts, the lemon juice and season with black pepper. Truly fantastic for a change!
