Leek, Cheese and Potato Tortilla

What you need: 1 thinly sliced leek, 1-2 medium potatoes (cooked and cooled), 6 eggs, 85g of cheddar, 1tbsp finely chopped sage.

What to do: Melt a knob of butter in a medium sized frying pan and cook the leek for about 5 minutes, until softened. Meanwhile, cut the potatoes in half and then into slices about 1/2cm thick. Beat the eggs, season and stir in the cheese and sage. Add a little extra butter to the pan if needed, tip in the potatoes and then the egg mixture. Turn the heat to low, then cook for 10minutes until nearly set. Place under a hot grill and then cook for a couple of minutes more until the top is set and golden. Slice into wedges and serve with a crisp green salad. (serves 4)
