What you’ll need:
1 celeriac, peeled, 1 egg, 3oz breadcrumbs, 3 tablespoons olive oil, 1 oz butter, salt.
What to do:
Cook the celeriac in salted, boiling water for 10 mins, then drain and leave to cool slightly.Meanwhile, beat the egg with a pinch of salt in a shallow dish, and spread out the breadcrumbs in another shallow dish. Cut the celeriac into ¼ inch slices and dip them first in the egg, and then in the breadcrumbs. Heat the oil and butter in a frying pan, and add the celeriac pieces, frying until golden brown. Remove and drain on kitchen towel, then sprinkle with a little salt and serve.
