Remove the strong shanks and put them in the pot when the water is boiling.
Place greens in pot and cover them with water. Boil till tender, leaving them uncovered.
Take them out, squeeze them free of the liquor, which you retain and chop them finely or put through a sieve.
Sprinkle with oatmeal and put back in the pot with the liquor.
Add a little warmed cream, with pepper and salt to taste. Stir, boil up for a few minutes, and serve with thin oatcakes.
