Fennel & tomato salad

• 1 bulb of fennel trimmed;
• 4 oz tomatoes;
• juice of 1 lemon;
• salt to taste;
• finely chopped parsley to garnish

Slice the fennel and cut it into small pieces.

Slice the tomatoes thinly. Mix in the lemon juice and salt, garnish with chopped parsley.
